Ingredients
Yield: 1Qt Jar
- 2 cups (5-6) Fully ripe bananas
- 1/4 cup fresh lemon juice
- .875 oz box Dry Fruit Pectin
- 1/2 tsp. butter
- 1/4 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Ginger
- 3 cups sugar
Directions
1. Sanitize jar for canning
2. Mash bananas and combine with lemon juice and spices in a 6-8 qt pot
3. Stir in fruit pectin
4. Add butter and bring to a full boil.
5. Very quickly stir in all of the sugar and return to a boil for 60 seconds., stirring constantly.
6. Skim off any excess foam and quickly ladle hot banana butter into jar.
