Chicken Casserole

Ingredients

Yield: 6 Servings

  • 4 Tbsp Vegetable Oil
  • 1/2 Cup onion, diced
  • 1/2 Cup celery, chopped
  • 1 Package frozen broccoli, thawed
  • 1/2 Soup can milk
  • 1 Soup can water
  • 1 Cup minute rice, uncooked
  • 1 Small jar cheese whiz
  • 2 Cups shredded chicken
  • 1 tsp parsley
  • 2 tsp salt
  • 2 tsp pepper

Directions

1. Preheat 350 F. Grease a 2-qt casserole dish.

2. Heat oil over medium-low heat in a large stockpot.

3. Saute the onions and celery until onions are translucent.

4. Add broccoli and cook for 10 minutes on low.

5. Add soup, milk, water, rice, cheese, salt, pepper, and chicken. Bring to boil.

6. Pour into casserole dish, top with parsley, and bake for about 30 minutes.
